Taco-Filled Bell Peppers

- 1 lb ground beef
- 1 (1 1/4 ounce) package taco seasoning mix (1-1/4 oz)
- 1 (8 ounce) can kidney beans, drained and rinsed
- 1 cup salsa
- 4 medium green peppers
- 1 medium tomatoes, chopped
- 3⁄4 cup shredded cheddar cheese
- 1⁄2 cup sour cream
directions
- In lg skillet, brown beef; drain.
- Stir in taco seasoning, beans and salsa.
- Bring to a boil; reduce heat and simmer for 5 minutes.
- Cut peppers in half lenghtwise; remove seeds.
- Drop peppers in boiling water for 3 minutes; drain.
- Spoon 1/2 cup meat mixture in each pepper half.
- Place peppers in baking dish.
- Cover and bake at 350* for 20 minutes.
- Top each with tomatoes.
- cheese and sour cream.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
