  1. Combine first 5 ingredients in a bowl, make a well in the center.
  2. Combine egg yolks, 2 whole eggs, milk, vanilla, and sweet potato; stir into flour mixture.
  3. Beat 4 egg whites at high speed with an electric mixer until soft peaks form, gently fold into batter.
  4. Preheat and lightly grease waffle iron, pour batter and bake until crisp.
