- 1 1⁄4 cups flour
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon brown sugar
- 1⁄4 cup cooked mashed sweet potatoes
- 2⁄3 cup milk
- 4 tablespoons butter, melted
directions
- Preheat oven to 450 degrees.
- Sift flour, baking powder, and salt into bowl. Add sugar and stir to mix.
- In seperate bowl, combine the sweet potatoes with the milk and melted butter. Mix well until evenly blended.
- Stir the dry ingredients into the sweet potato mixture to make a dough. Turn onto a lightly floured surface and knead lightly just to mix, 1-2 minutes.
- Roll or pat out the dough to 1/2 inch thickness. Cut out into rounds with 1 1/2 inch cookie cutter.
- Arrange rounds on a greased cookie sheet. Bake until puffed and lightly golden, about 15 minutes.
- Serve the biscuits warm.

This is a great basic biscuit recipe, but in order to get a pronounced sweet potato flavor, I increase the quantity on my second try to 3/4 c, and decreased the milk a bit. The color is amazing, especially if you don't over work the dough. I also didn't cut the rounds with a cutter, but instead patted the dough out into a 1/2 inch thick square, and cut the square into 9 even biscuits, separated them slightly and baked. (I'm lazy that way.) Thanks for submitting this recipe, Suzie-Q
