Taken from a magazine article titled "Soy Story" - as yet untried by me ! Cooking time does not include refrigeration time. Fresh or frozen berries can be used.
This was great! Made it with sour cherries, blueberries and cranberries and added some vanilla essence instead of Grand Marnier. As I found I was run out of soy, rice and almond milk, I added one tablespoon of almond butter to the tofu mix and then dissolved the gelatin powder in 200 ml water. Accidentally I threw the sugar into the blender, so I blended tofu, berries, sugar and almond butter and then slowly poured in the dissolved gelatin. Maybe it was because of that that it didn't firm up enough to turn it out of the ramekins, but that didn't matter at all. It was such a fluffy, flavorful mousse, I'll definitely make it again! Thanks for posting!
