    Crab is quite expensive but this is not. Artificial crab (Surimi) is quite tasty and can be found in most stores now. This makes an easy first course. Could also be served in a wine glass with shredded lettuce in the bottom.

    Directions:

      Combine surimi, avo, sprouts and celery in bowl.

      Stir mayo, yogurt, horseradish& lemon juice together.

      Add to surimi and toss gently.

      Put lettuce leaves on 4 plates and divide salad on top.
