Super Simple Pineapple Cake

"I picked this recipe up while living in Argentina from an incredible family down there. This is super simple and the syrup makes it a very moist and sweet cake. Enjoy!"

  • Mix the dry ingredients for the cake.
  • Stir in the Eggs and Pineapple.
  • Pour the mixture into a 9x13 pan.
  • Sprinkle the Coconut and Brown Sugar over the top.
  • Bake at 350 degrees for 40 min--or until cake is slightly browned on top and passes the "toothpick test".
  • Once the cake is out of the oven, mix all of the syrup ingredients in a saucepan and bring to a boil.
  • Pour hot mixture over the warm cake.
  • Make sure you let the cake sit for a few minutes to let the syrup get completely absorbed before serving.
