Spicy and nourishing and most importantly simple!
- 1 medium carrot, diced
- 1 medium onion, diced
- 1 medium potato, diced
- 1 medium cooking apple, diced
- 2 tablespoons oil
- 2 garlic cloves, crushed
- 1 tablespoon curry powder
- 300 ml tomato juice
- 1200 ml vegetable stock
- Heat oil and sauté apple and vegetables until the onion is transparent.
- Add garlic and curry powder and cook for a further 2 minutes
- Add all liquid and simmer for 30 minutes.
- Liquidise and reheat if needed.
