My mom gave me a cookbook from Westlock, Alberta, Canada (where I lived close to and attended school) this recipe is from that book.

For healthy muffins, these were really good. They were very moist! I only had 5 bananas & it still was yummy. I didn't have sunflower seeds, so substituted flax seeds. Instead of the brown sugar, I swapped 3/4 cup maple syrup. Very good! I will make again & time, i'm adding in some pineapple-i think it would be ridiculously good! Thanks.

  1. Mix the milk and bran and let soak till milk is absorbed.
  2. Add oil, eggs, vanilla, bananas.
  3. In a seperate bowl, combine dry ingredients.
  4. Add to wet ingredients.
  5. use large paper muffin cups and fill almost to the top.
  6. Bake 375.
  7. 20 minutes.
