- 1 3⁄4 cups whole wheat flour
- 1⁄4 - 1⁄2 cup Splenda granular, no calorie artificial sweetener (you control sweetness)
- 2 teaspoons baking powder

- 1⁄4 cup Egg Beaters egg substitute, original
- 3⁄4 cup light vanilla soymilk
- 2 teaspoons canola oil

- 1 cup blueberries
directions
- Preheat oven to 400 degrees. Mix dry ingredients in medium bowl. Make a well in the center of the ingredients, add wet ingredients, and mix. Fold 1/2 of the blueberries into the batter, and pour into muffin tin. Top the batter with the remaining blueberries. Bake until golden (about 10-12 minutes).
