Summer Tomato Pasta

"I think this came from the newspaper. It is so good with fresh summer tomatos, but I have used canned diced in the winter when I crave it. (I warm the canned tomatos first). The mozzerella and basil are my own optional additions. Serve with a salad and crusty bread. The cooking time is the sitting time"

  • 1 lb diced fresh ripe plum tomato (I use 8 or 9)
  • 1 (2/3 ounce) envelope good seasons Italian salad dressing mix (dry)
  • 14 cup bertolli classico olive oil
  • 1 lb angel hair pasta, cooked according to pkg. directions
  • fresh mozzarella cheese, balls cut into quarters (to taste)
  • thinly sliced fresh basil (optional, to taste)

directions

  • Combine the diced tomatos with the Good Seasons dressing and 1/4 cup olive oil in a glass bowl.
  • Let stand at room temperature for 30 minutes.
  • Put cooked angel hair in a large bowl and spoon tomato mixture on top.
  • Mix.
  • add basil and mozzerella balls if desired.
  • Serve.

I'm a semi-retired sign engraver and just starting to enjoy cooking for fun. There are so many good recipes here that I can get lost just looking. Where DID that time go? I also have a huge collection of cookbooks that up til now were just collecting dust. My favorite dish to cook is my Mom's chili because my husband says it is just like his grandmothers and brings back nice memories for him. I also take painting lessons where I can find them - watercolor & acrylic mostly. Right now ,I love Chipotles even though there are none near us. Their vegetarian bowl is everything I like. Also the Horse Inn in Lancaster is where I stop being a vegetarian (once a year!) - steak tips on toast. Very good!
