Stuffed Zucchini..mmmmm!

ingredients
- 6 small zucchini
- 1 1⁄2 cups Italian seasoned breadcrumbs
- 1⁄2 cup finely chopped onion
- 1 -2 garlic clove, chopped
- 1 (8 ounce) package shredded mozzarella cheese
- 1⁄2 cup parmesan cheese
- 1 beaten egg
- salt and pepper
- butter
- olive oil
directions
- wash and clean zucchini
- place in pot of boiling water(enough to cover).
- boil 5-10 mins till tender.
- drain and cool slightly to handle.
- slice in half lengthwise and using teaspoon scoop out pulp and place in large bowl.
- place zucchini halves in lightly oiled baking pan or dish.
- In frying pan saute onion and garlic in 2 Tbs. olive oil till clear and softened.
- Add breadcrumbs, onions and garlic, 1/2 package mozzarella cheese, parmesan, egg and salt and pepper.
- Toss and blend lightly till mixed.
- Stuff zucchini halves dividing mixture evenly among all. dot with butter and drizzle with olive oil.
- Bake 350 degrees for 30 minutes Sprinkle with other half of cheeses and bake 5-10 mins longer till melted and a bubbly.
- May make ahead and bake and add cheeses as instructed.

It is such a busy, fast paced job that there are times I come home drained. I have learned to make fast easy meals from Recipezaar and save the more complicated ones for my days off. My husband is in the Army and was away for a year and now is stationed so far that he comes home on Friday nights and goes back Monday mornings. So I always like to have some nice meals waiting for him. <br />I always say it is like we are dating again. Since we only see eachother on weekends I try to impress him with a nice homecooked meal when he gets home. He usually eats at the mess hall. Other nights we will go out to dinner and a movie. I have one son who has been my Rock of Gibraltar through this. so some of meals are geared towards his tastes. He works and goes to college so I try to sneak a special meal in for him when he is home. Which isn't too often. I enjoy trying new recipes and sharing some of mine.</p>
