This was really good. Would love to give it 4.5 stars, but Food.com doesn't allow 1/2 stars. I did it a little bit different in that I added the chopped tomato to the spinach & onion stuffing instead of making a tomato dressing. I also substitued the almond flour (didn't have any) with 1/4 tsp. of hemp seeds & added a dash of garlic powder. Baked it for 35 min. & it came out perfectly moist. So healthy & delicious!

Ingredients Nutrition

  • 2 small piece of flat sole
  • 1 handful Baby Spinach, chopped
  • 14 onion, minced fine
  • 1 tablespoon oil
  • 1 tablespoon almond flour
  • 1 tomatoes, cut in small pieces
  • salt and pepper
  • 1 little dried basil
  • optional a tablespoon scd mayonnaise

Directions

  1. Pre heat oven to 350°F.
  2. Heat small skillet and add oil. Saute onion until transparent. Add spinach. Cook until it is just wilted.
  3. Add almond flour and cook, stirring until slightly browned.
  4. Lay one piece of the sole on a large piece of foil, large enough to enclose the sole. Add the stuffing and top with the other piece of sole.
  5. ( If desired you can stuff each piece and roll tightly in individual pieces of foil) Enclose tightly in the foil.
  6. Place on a baking pan in the oven for 30 minutes.
  7. 20 minutes into the cooking time, simmer the fresh tomato in a covered saucepan until soft and tender. Pour over fish. If desired, top with mayonnaise.
