Since my children and I do not like bell peppers, I came up with this as our dinner when I fix Stuffed Bell Peppers for the husband.
- green bell pepper, seeds removed and diced
- onion, diced
- 1⁄2 cup Minute Rice
- 1 lb ground beef
- 1 (14 ounce) can creamed corn
- 1 (10 1/2 ounce) can tomato soup
- Cook onion and bell pepper in oil until tender. Add ground beef and cook until no longer pink; drain. Add rice, cream corn and tomato soup. Mix thoroughly. Simmer for 5 minutes to heat through.
