Strawberry Rice Salad

"I have found several recipes, vintage, if you will that might remind some of the baby-boomers and older of another time in our history. I would like to share some of them with you. As in earlier times, when money was a little harder to come by,this "old-fashioned" recipe is made with cooked rice and a few of the "usual suspects," gelatin, pineapple, nuts, are you beginning to remember? If you do,maybe you would like to make this again, and if you don't maybe you would like to try it anyway, because this is a wonderful dish, that I truly hope you will enjoy. Cooling time is cooking time. Plan ahead, this is better made the day before you plan to serve it."

  • Dissolve gelatin in boiling water; add cold water.
  • Chill until it starts to congeal.
  • Fold in rice, milk, whipped cream, pineapple and nuts;
  • Chill until firm.

  1. Love this salad Fluff! Reminds me of something we had when I was growing up! Great flavor!!! I forgot to add the milk, but that's ok. I also added 1 cup of mini marshmellows. I think this would be great with other flavors as well -- maybe Orange jello and mandarin oranges, or lime jello with the pineapple. Also I used sugarfree jello which worked just great! Thanks for posting! Great recipe!

Cooking is my passion, and I am slowly, but surely beginning to venture into the world of baking. To me, cooking is so much easier because baking is so much more exact. I love to make Italian and Mexican food the best, followed by Chinese and last, but by far the least, good old American food! How can you beat chicken fried steak, mashed potatoes and gravy?? I love to find several recipes and put my own spin on them and create a new recipe.
