  • Cook squash with chopped onion until tender. Drain all water off squash and add butter.
  • In a large mixing bowl, add eggs, salt, pepper and mix well.
  • Then add cracker crumbs and evaporated milk until soupy.
  • Add green chiles and then add cheddar cheese ( I leave a little to put on top) .
  • Pour into a casserole dish that has been sprayed with Pam.
  • Bake at 350 deg for 30 min to l hour until golden in color, brown and bubbly.
