  • Wash the spinach and place in a large covered pan over low heat. Steam for 1-2 minutes until the spinach wilts. Drain well.
  • Heat the garlic in 1 tablespoon of the olive oil until fragrant.
  • Add the preserved lemon, olives and spinach. Cook for another minute, season with salt and pepper, and stir in the remaining olive oil.
  • Serve immediately or chill and serve cold as a salad.

  1. This was really nice, and greatly enjoyed the preserved lemons and olives in this recipe. I added some juice from the lemon preserves in order to add more taste, but all in all it was not bad.
