  • Using skillet, or frying pan, fry bacon strips until crumbly--don't burn; remove from pan and crumble. Use for topping.
  • Add onions to the left-over bacon grease and fry until transparent.
  • While grease still warm, add sugar, stirring until dissolved. Then add the vinegar and stir to blend flavors.
  • Add the canned spinach, heat and stir.
  • Transfer spinach into a serving bowl with slotted spoon.
  • Sprinkle bacon crumbles on top. Salt and pepper to taste.

My age is 55. I've lived a lot of places in the US. I use to actively work as a Psychiatric RN. Fun.. well it has changed. The best cookbook for me, has been The Better Homes Cookbook (mom's old one). My passion is sitting and talking with my son Justin and cracking jokes with him. I've cooked forever it seems. But still, I just get better with age. But when first married, and learning to cook, my mother would respond, "Oh Honey, I don't know exactly how much...." Now I understand! When I cook my usuals, I just go into an automatic mode. But cooking from others' recipes are fun...now that I don't HAVE to cook! A lot of things are like that for me. I have been happier in the last 5 years I think, than I've ever been. I've earned it though! Life is full of twists and turns. Some are dangerously hard and some are easy tree-lined avenues that are well lit. cooking I believe is a way to achieve a steadfast "Balance." Very therapeutic and manageable at one's own pace. I recommend everyone trying it!
