Spinach Fritters (Rachael Ray)

"Sounds delish and is one of Rachael's budget meal items. She paired these up with pan fried pork chops, but I think it would be great as a main dish with a side or two of veggies!"

  • In a large bowl, stir together the spinach, onion, eggs, the flour and cumin; season with salt and pepper.
  • Heat the olive oil over medium heat in a frying pan. Spoon heaping tablespoons of the spinach batter into the oil. Cook the fritters until crisp and browned, about 2 minutes on each side.

  3. I used 2 tsp of parmesan cheese instead of cumin No salt Used butter to fry instead of olive oil. They turned out great!
     
  4. Sorry but we didn't like these. I used fresh baby spinach which I wilted by steaming and then rung and chopped. I used sweet onion, brown eggs, a gluten free rice flour mix (For every cup white rice flour, 1/2 cup tapioca starch), sea salt and a unrefined olive oil plus the pepper.
     
  5. I tried to make these and the spinach mixture would not hold itself toether to form into fritters. The result was a loose, burnt mess. Maybe more egg or flour? Or maybe I am just not a great cook.
