Spicy Meatballs and Couscous

"This title is a bit misleading--I don't find the dish to be very spicy, but some people do, hence the warning label. I made it up one night when I had fifteen minutes to get dinner on the table--I juggled my pots and had it ready in twelve! Don't worry if it sounds like it needs more herbs or spices, it is tasty as is. The peanuts are a South African thing to add--try it at least once."

  • Place meatballs in a pot, cover with the tomatoes and chilis, and bring to a boil, stirring occasionally.
  • When boiling, reduce heat, cover, and simmer 8-10 minutes.
  • Prepare couscous according to package instructions.
  • Spoon meatballs and sauce over couscous and serve, sprinkling with peanuts if desired.
