I'm not sure where my mother got this recipe but it's been around since I was little. I love this recipe! Nice and easy to make and very tasty. (Of course I like to add more seasoning than it calls for).
- 1 cup finely chopped onion
- 1 lb small curd cottage cheese
- 1⁄4 cup vegetable oil
- 1 tablespoon soy sauce
- 3 eggs, beaten
- 1⁄4 cup chopped nuts (walnuts are nice)
- 4 cups Special K cereal
- 1 teaspoon salt
- 1 teaspoon sage
- Mix all ingredients together and put into a shallow greased baking pan. (about 9x9").
- Bake at 350 degrees for 45 minutes.
I was raised on this recipe, ate it every Saturday. It brings back home cooking for a vegetarian family (not vegan).
Your mother probably obtain this recipe from an Adventist. Its a fact that this dish was created by a Seventh-Day Adventist. Since we are mainly vegetarians, they had to find an alternative to meat so why not cereal since the founder of Kelloggs was Adventist himself. Enjoy the dish and the special meaning behind.
This is a tried and true recipe. I've grown up with Special K Loaf and it is simply delicious!!! Instead of the sage, soy sauce, and oil, I used Lipton onion mix and melted low fat butter.
