Spaghetti Muffins

Jewelies made these yesterday while our friend Wendy was visiting. Wendy made them this morning for brunch. They were yummy and I'm thinking would make great kids food (a lot tidier than watching a littly eat canned spaghetti!) Wendy added in chopped bacon and we all reckon onion and/or capsicum would be good in there too. The texture is more like an omelette than an actual muffin.

If you like pickled gherkins try adding two, I zap mine in the food processor first. And up the cheese an extra 1/2 a cup (I use parmesan for the extra). This was Ruby's idea as she has decided she loves gherkins and now I will always make them like this! Yum! Also Baked Beans turn out great too.

Ingredients Nutrition

  • 1 (400 g) can spaghetti in tomato sauce
  • 1 12 cups grated cheese
  • 4 eggs, lightly beaten
  • salt and pepper

Directions

  1. Pre heat the oven to 180c.
  2. Grease a 12 hole muffin pan, divide the mixture evenly between.
  3. Bake for 15 minutes, remove from the oven and allow to sit a couple of minutes in the tin before serving.
