Spaghetti Carbonara

- 1 lb uncooked spaghetti
- 1⁄2 lb sliced bacon, cut into 1/2-inch slices
- 1 medium onion, very finely minced
- 2 garlic cloves, minced
- 2 tablespoons finely chopped fresh basil or 2 tablespoons sage
- 2 large eggs, well beaten
- 1⁄2 cup grated parmesan cheese
- salt and black pepper
directions
- Cook spaghetti in boiling salted water according to package directions.
- Meanwhile, cook bacon in a large heavy skillet over medium heat until nicely crispy. Remove bacon from skillet using a slotted spoon to a small bowl. (Do NOT remove bacon drippings, because that's where this recipe gets its flavor.).
- Cook onion, garlic, and basil in bacon drippings, stirring, over medium heat until onion is softened.
- Drain hot pasta and return to pot. Immediately pour onion, garlic, and bacon drippings over hot pasta and toss well. Pour beaten eggs over pasta and stir them quickly into pasta so that they coat pasta as evenly as possible. It is important that pasta still be steaming for this step, since it is the heat from the pasta that will cook the eggs. Add cheese and reserved bacon; stir again. Season with salt and pepper to taste. Serve immediately.

I am 36 years old and the mother of four wonderful children. Two girls and two boys. ?Being a stay-at-home mom affords me ample time to indulge my passion for cooking and baking! (Thanks again to my wonderful husband!) My oldest daughter loves to help in the kitchen and wants to eat what she cooks, so that's helping broaden her eating horizons! My youngest daughter is still pretty picky, but we're dealing! Thank goodness my husband is gracious enough to eat whatever I cook. (I guess he knows that if he complains, he'll be asked to do the cooking himself!!)
