- 226.79 g small shell pasta, Cooked al dente as directed on box and drained and rinsed with cool water
- 236.59 ml peas, defrosted
- 236.59 ml corn, defrosted
- 236.59 ml canned black beans, rinsed and drained
- 236.59 ml diced red bell pepper
- 59.14 ml diced celery
- 78.78 ml diced slicing pepperoni
- 236.59 ml shredded cheddar cheese
- 59.14 ml diced scallion
- 1 chipotle pepper, diced
- 1 garlic clove, minced
- 2.46 ml cumin
- 236.59 ml ranch dressing, low calories
- salt and pepper, to taste
- 29.58 ml fresh cilantro or 29.58 ml fresh parsley, minced
directions
- In a large bowl mix all ingredients together.
- Adding more chipotle and adobo if desired.
- Chill for 1 hour for flavors to meld.
