- 1 cup cooked brown rice
- 1 cup corn kernel
- 1 cup chopped zucchini
- 1 cup grated carrot
- 1⁄2 cup diced tomato
- 1⁄3 cup diced red bell pepper
- 1⁄4 cup sliced green onion
- 2 tablespoons diced red onions
- 2 tablespoons chopped cilantro
- 1 tablespoon fresh lime juice
- 1 tablespoon minced pickled jalapeno pepper
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
- 1 (15 ounce) can black beans, rinsed and drained
directions
- Combine all ingredients in a large bowl and mix well. Chill at least one hour before serving. Cooking time is chill time.
