- 29.58 ml vegetable oil
- 1360.77 g nutria, cut in serving pieces
- 29.58 ml cajun seasoning, plus
- 9.85 ml cajun seasoning
- 473.18 ml onions, peeled and minced
- 236.59 ml green bell pepper, seeded and minced
- 14.79 ml flour
- 4.92 ml salt (optional)
- 887.21 ml chicken stock or 887.21 ml broth
directions
- Heat oil in stockpot until very hot.
- Sprinkle seasoning on meat; stir well.
- Add meat to pot, brown on all sides until golden.
- Cook and stir 10 minutes.
- Add onion, bell pepper and flour, cook and stir 10 minutes.
- Add salt and chicken stock to pot cook and stir occasionally, scraping the bottom of pot to remove all the goodness.
