This is such a simple side dish that I use often. You can adjust the butter and sour cream amounts to satisfy your taste and diet. My measurements here are pretty rough estimates--I usually eyeball it, so keep that in mind.
- Wash potatoes.
- Prick potatoes for baking.
- Bake in microwave until soft and cooked through (the time and power will depend on your microwave).
- Place cooked potatoes in mixing bowl, add all other ingredients, and mash with potato masher until at desired consistency.
Made 1 serving using 2 tiny new potatoes cooked 7 minutes in the microwave and "smashed" with 1 T butter and 2 T Mock Sour Cream and that's my new favorite way to eat baked taters.Served with Grilled Indoor Pork Chops for Two and Barb's Fried Apples -Diabetic-Low Fat. These were very simple and pretty good. Just like a baked potato all smashed up in a bowl. I used a spread instead of the butter and I would definitely use more of that next time. I microwaved mine for 8 minutes and they could have used a couple more minutes.
