Smashed Potatoes for Two

This is such a simple side dish that I use often. You can adjust the butter and sour cream amounts to satisfy your taste and diet. My measurements here are pretty rough estimates--I usually eyeball it, so keep that in mind.


  1. Wash potatoes.
  2. Prick potatoes for baking.
  3. Bake in microwave until soft and cooked through (the time and power will depend on your microwave).
  4. Place cooked potatoes in mixing bowl, add all other ingredients, and mash with potato masher until at desired consistency.

These were very simple and pretty good. Just like a baked potato all smashed up in a bowl. I used a spread instead of the butter and I would definitely use more of that next time. I microwaved mine for 8 minutes and they could have used a couple more minutes.
