Slow Cooker Black Bean Soup (Crock Pot)

An old standby.

Directions

  1. Soak beans overnight.
  2. Drain and rinse.
  3. Place in a pan, cover with water, and simmer on low for an hour.
  4. Drain beans.
  5. Place all ingredients except cornstarch in the crock pot.
  6. Cook on high for 4 hours.
  7. Use a slotted spoon to remove about 1 cup of cooked beans and ham.
  8. Place them in a blender with a little bit of the broth and puree.
  9. Return to crock pot.
  10. Combine cornstarch with cold water in a bowl and mix.
  11. Add to crock pot and mix.
  12. Cook for an another 30 minutes or until broth thickens.

Pretty good! I like a chunkier soup so maybe I'll add some veggies next time. Or keep the same amount of beans and ham and lessen the broth.
