Sloppy Joe Casserole

ingredients
- 1 lb lean ground beef
- 1⁄2 cup sliced green onion
- 1 (15 1/2 ounce) can sloppy joe sandwich sauce
- 1 (11 ounce) can corn mixed with chopped peppers, undrained
- 1 (6 ounce) can refrigerated buttermilk biscuits
directions
- Heat oven to 375.
- In large skillet, brown ground beef with onions, drain.
- Stir in sandwich sauce and corn.
- Cook 2 to 3 minutes or until thoroughly heated, stirring occasionally.
- Spoon mixture into ungreased 1 to 1 1/2 quart casserole.
- Separate dough into 5 biscuits; cut each in half.
- Arrange, cut side down, around outside edge of hot mixture with biscuits touching.
- Bake at 375 for 15 to 20 minutes or until biscuits are deep golden brown.

This was great with some changes, all of which I would recommend again. I browned half an onion (chopped), then added the beef and browned. Then I added 12 ounce of frozen corn and some frozen sweet peppers, a can of hominy (drained), and the sloppy joe sauce, some hot sauce and garlic powder, and some ketchup. Everything went in a 19x12 pan. The biscuits were a small size can (6 ounces), cut in half, and placed cut side down at the extreme edges of the pan. They cooked perfectly. Delicious! A real pantry pleaser. -
I've made this 2 or 3 times now. It's cheap, easy and delicious. I too had a hard time with the biscuits. Next time I may just lay them over the top, if they're immersed AT ALL, that part doesn't cook. I added some shredded cheese to the top. The recipe on Pillsbury.com calls for Jr. Biscuits, but I couldn't find any. All in all though...a tasty tummy filler. -
Reminds me of when I was a kid. My mom would take half of the biscuits and spread them on the bottom of the greased pan first, then top with sloppy joe mix. She would also place slices of American cheese on top of the sloppy joe mix before putting the other half of the biscuits on the cheese. It made it look like a sloppy joe sandwich casserole. My DH really liked this as he thought it was easier to eat with a fork. -
Very Good but I had a hard time with the biscut part being right. I will make it again but eat it like regular sloppy joe's.

I am married and mother of 3 wonderful children. I have a 21 year old daughter and 19 year old twins, a boy and a girl. The picture above is of my granddaughter Destiny born April 5, 2007. She was a preemie and weighed 1 lb. 14 oz. at birth. She spent 73 days in NICU in the hospital She has came a long way and was 11 months and a little over 19 pounds when the picture was taken. She shows no problems at all now and is truly a miracle and I thank God for her. She is already Nana's little girl. I have a wonderful husband who is very honest with me about any dish I prepare. He is my best critic as I am sure most husbands tend to be. I love trying new recipes and love to cook. I love Taste of Home cookbooks. I like to do counted cross-stitch and recently I have rediscovered a lost love of mine; reading, especially mysteries. I can get lost in a good book for hours. Weather permitting my hubby and I like to ride on his Harley. Nothing like it! If I had a month off with no responsibilities I would travel. Love the beach!!! My dream is to retire and for my hubby and I to travel to all the places I would like to see.
