Sloppy Joe Biscuit Cups

- 1 lb ground beef
- 1⁄4 cup finely chopped celery
- 1⁄4 cup finely chopped onion
- 1⁄4 cup finely chopped green pepper
- 1⁄2 cup prepared barbecue sauce
- 1⁄4 teaspoon salt
- 1 (2 ounce) can refrigerated buttermilk biscuits
- 5 (1 ounce) slices cheddar cheese, quartered
directions
- Preheat oven to 400 degrees.
- Brown beef, celery, onion and bell pepper.
- Drain.
- Stir in BBQ sauce and salt.
- Simmer uncovered for 3 minutes.
- Place (10) biscuit into each well of an ungreased muffin tin.
- Press dough firmly onto bottoms and up sides of cups.
- Spoon about 1/4 cup of beef mixture into each biscuit cup.
- Bake 10 to 13 minutes or until edges of biscuits are golden brown.
- Place 2 quarter slices of the cheese on top and return to oven just until cheese melts.
- Let stand one minute.
- Loosen edges and remove from pan.
- Serve.

I tried this recipe tonight because I wanted something different with ingredients I needed to use up. These were so good and my family loved them! I love the ease of this recipe and they make the cutest little baskets of sloppy joe. I made mine with a little extra onion and pepper and no celery as we aren't big celery fans. Thanks for sharing this kid friendly easy weeknight meal with us!
