Simply Elegant Frittata

"Ready, Set, Cook! Special Edition Contest Entry. This original recipe uses many of the recently-identified "super foods" and is easy to prepare. It can be used for breakfast, brunch, or even dinner with a green salad. Using only 6 bacon slices creates just enough grease to brown the potatoes nicely. The colors are wonderful and it looks very pretty in the pan! Prep time is about 20 minutes with 30-35 minutes bake time."

  • Fry bacon pieces in a 12" oven-proof skillet until crispy.
  • Using the bacon grease, add and brown the shallot and Simply Potatoes Diced Potatoes with Onion.
  • While bacon is cooking, whisk together the eggs, half and half, basil, marjoram, salt, pepper, pepper flakes and sundried tomatoes.
  • When potatoes are brown, turn off the heat. Add and layer evenly the spinach, bell pepper rings, and goat cheese crumbles over the entire top.
  • Pour egg mixture over the potatoes, vegetables, and cheese.
  • Bake in a 350F oven for 30-35 minutes, or until knife comes out clean.
  • If desired, broil on high heat for 3-4 minutes to brown the top.
  • Let the Frittata rest for 2 minutes before slicing into pie-shaped pieces.
