DRESSING
- 2⁄3 cup plain yogurt
- 1⁄4 cup extra virgin olive oil
- 2 tablespoons red onions, finely chopped
- 1 tablespoon pomegranate molasses
- 1 tablespoon honey
- 1⁄2 teaspoon ground rosemary
- 1⁄2 teaspoon black pepper (to taste)
- 1⁄8 teaspoon sea salt, ground (to taste)

SALAD
- 4 leaves kale, washed and drained
- 1 carrot, peeled
- 1 grapefruit, peeled, pith removed and segmented
- 1 mandarin orange, peeled, pith removed and segmented
- 1 kiwi, skin removed and wedged
- 1 navel orange, peeled, pith removed and segmented
- 1⁄2 cup crumbled feta cheese
- 2 tablespoons pomegranate seeds
- 2 tablespoons slivered almonds, toasted
directions
- For the dressing; In a mixing bowl, combine all ingredients and whisk until well blended. Transfer to the refrigerator for 2 hours.
- Place in order all the ingredients evenly on two plates. Drizzle dressing over and garnish with toasted slivered almonds. Serve 2.
