Simple Red Beans and Rice

ingredients
- 1 lb kielbasa, cut into 1/4 inch slices
- 1 onion, chopped
- 2 garlic cloves, pressed
- 1 bell pepper, chopped
- 2 (15 1/2 ounce) cans red beans, drained
- 1 (14 1/2 ounce) can diced tomatoes
- 1⁄2 teaspoon thyme
- 1⁄4 teaspoon cayenne pepper
- salt and pepper
- 3 cups brown rice, cooked
directions
- In a skillet cook sliced sausage for about 2 minutes.
- Add onion, garlic, and bell pepper, and saute till veggies are tender.
- Add beans and tomatoes with thier juice.
- Season with thyme, caynne, and salt and pepper to taste.
- Serve over rice.

This is delicious! My husband came to me with a request for red beans and rice to go with his hot wings for dinner...in an hour!Yikes! I grabbed this recipe, a couple of cans of kidney beans, some seasonings, and...I made it within the hour! I didn't include meat, as he was already having chicken wings. I also had rice in the freezer, so I just thawed that out. I had about half of a jalapeño pepper in the freezer that I'd previously seared and peeled, so that went into the pot. Since I didn't use any meat, I didn't drain the beans, opting for just a little more flavor, as well as a 3 inch long piece of celery I needed to get rid of. Since I'd never made red beans and rice before, I didn't quite know what to expect, but we were in for a big surprise, it was excellent! It ws just sooo good! I served them over mounds of fluffy rice, and we enjoyed it very much! Thank you so much for sharing! Great recipe!

I've been using this recipe for a year or so now, and I love it every time. My kids aren't crazy about the dish in general, but they'll eat this happily. I did cut back on the cayenne after the first time, for their sake--I just add a bit of tabasco to my bowl. I also like to add a stalk or two of celery for crunch and extra flavor. Thanks for this easy, go-to recipe, design*girl!

It has taken me too long to make my Pick A Chef selections and prepare the recipes, but good things come to those who wait..........This was SOOO good! I can't believe how simple and quick this was to prepare, yet producing such a yummy dinner dish. I followed almost everything to a "T" but I did have to sub Italian Seasoning that contained thyme, as I didn't have it and thought I did. I will definitely make this again and look forward to doing so. There is a reason design*girl posted this recipe in addition to the three pages of other recipes that she found on Zaar. I am an interior designer and currently a stay at home. I am also a wife, and mother to two crazy fun girls and our new baby boy. I love to entertain friends, but hate every-day cooking, well the cleaning mostly.

I love Recipe Zaar for its great variety of choices. I am a cookbook junky, but zaar has got me looking at them less and using zaar more. I still love to thumb through my cookbooks, but I always check zaar to see if there might be something better, easier, quicker, or similar to add to my cookbooks.
I love to plan parties - themes, food, decorations the whole shebang. My favorite party planning book is "Do it for Less Parties". It has great food planned around a specific theme with decoration and entertainment ideas.
