Seven Vegetable Stew

  • Heat the oil in a large saucepan and fry the onions over a low heat for 5 - 6 minutes. Add garlic, paprika, cumin, ginger and cinnamon stick and cook for another 2 minutes. Stir constantly.
  • Add orange zest and juice, harissa, carrots, okra, squash, turnips, stock, tomatoes and puree. Bring to boil and simmer uncovered for 25 minutes.
  • Add honey, chickpeas and prunes. Bring back to boil and simmer for 15 minutes.
  • Remove cinnamon and add coriander. Season if desired and serve with cous cous.

  1. Wow what a winner. Served this up at a Moroccann dinner party for my friend who is a vegetarian. Unfortunately she didn't get a chance for seconds as everyone else wastucking into it. I followed the recipe totally and next time would probably substitue the turnips for something else. I personally wasn't keen on their taste. But everything esle very fragrant, tangy and yummy

How I rate... 5 stars - perfect, will make again without any changes. 4 stars - Liked it, will make again again but with changes. 3 stars - had to make major changes but got it to work. 2 stars - had to make major changes and it didn't work. 1 star - went terribly, a waste of time and ingredients, I cried, BF cried the cats cried you get the picture...
