  • Soak scallops in milk for 30 minutes.
  • Pat dry with paper towels.

  • Heat a large, heavy skillet or saute pan.
  • Add butter.
  • Add shallots and scallops.
  • Turn scallops continually, until golden brown. Remove scallops and cover.
