Scallops and Smoked Salmon Pasta

  • Heat oil in a medium saucepan over medium heat.
  • Add garlic and cook 30 seconds.
  • Stir together milk and cornstarch; add to garlic.
  • Cook and stir over medium-low heat till thickened and bubbly.
  • Add mozzarella cheese, parmesan cheese, pepper, and saffron; stir till cheeses are melted and smooth.
  • Add scallops, green onion, and capers; cook 3-5 minutes, stirring often, till scallops are done.
  • Stir in salmon.
  • Serve over hot cooked fettuccine or pasta.

We were on vacation at the beach condo and had some scallops AND smoked salmon, so I decided to make my version (since I didn't have exactly everything on the list) But this was easy, quick and VERY YUMMY! Everyone loved it! I did use 1 1/4 cup chicken stock and 1/2 cup skim milk and thickened it with flour instead of corn starch. I also added 1/2 of a chopped white onion. Thank you for having the perfect recipe just when I needed it! I will definitely be making this again!! Has LOTS of possibilities for variations!! Thanks again for a wonderful recipe!
