Savory Boca Casserole

"This one dish meal combines my favorite fall-winter flavors, rosemary, garlic, and thyme seasoned sweet potatoes and parsnips, for a bowl of down-home wholesome goodness, perfect for any night of the week. Mixed with ground soy burger, the savory starches transform any old Tupperware bowl into grandma's casserole dish."

I am a single 22 year old high school teacher, so I have zero time to spend in the kitchen. I cook for one and am an extremely healthy eater, but I still don't sacrifice on taste. My dinners are usually part pre-made, part homemade, and always read in less than 20 minutes. If I could co-host any Food Network show, it would definitely be Semi-Homemade with Sandra Lee. I love that lady! My new found talent- easy, yet elegant cakes and quick breads. My dream job- writing/editing for a food/health magazine, especially a young singles foodie column.
