Sausage Quiche

ingredients
- 2 pie crusts (9-inch)
- 1 lb sausage
- 1 cup onion, chopped
- 8 ounces fresh mushrooms, sliced
- 1 red pepper, diced
- 2 cups spinach
- 3 cups shredded cheddar cheese
- 6 eggs, beaten
- 2 cups milk
- 1 cup cream
- 4 teaspoons parsley flakes
directions
- Prebake crust 8-10 minutes. Brown and drain sausage and saute onions, pepper, mushrooms and spinach. Divide into 2 shells. Sprinkle 1 1/2 cups cheese into each pie shell.
- Beat eggs, milk, cream, and parsley together and pour over sausage mixture.
- Bake 35-40 minutes at 375 degrees.

The sausage quiche recipe I normally use is very rich as it calls for evaporated milk which I didn't have on hand so I searched and found this recipe using milk instead. I was skeptical about using milk and only two eggs but the end result was a quiche that was soft, creamy, and perfect! The crust was not soggy and everyone in my family enjoyed. I too sauteed the onions with the sausage and added a little Italian seasoning, black pepper, and garlic powder just because of personal preference. Now that I know you can achieve the same results with milk, I may not use the other recipe again and save a few cents by not having to buy the evaporated milk.

This is sooo good!! DH and I could have eaten the whole thing for dinner, but exercised a little self control...so had the leftovers for breakfast! I sauteed my onions with the sausage and pre-baked the pie crust for 10 minutes. It was cooked perfectly and the crust was crisp. Will be making again!! Made for AUS/NZ Recipe Swap #46.

This was absolutely delicious! I added onion, red bell pepper, garlic and green onion sauted in butter instead of onion only. I also used shredded velveeta and pepper jack cheese instead of cheddar. I found this recipe after I purchased all the ingredients I thought I would need. A in my book. Oh and it was very easy to make.
