  • preheat the oven to 180c/350f/gas 4 if baking. heat half the oil in a large casserole dish. tip in the steak(chopped small) or mince. turn quickly till brown.
  • lower heat. add rest of oil onion, garlic chillies and coriander. cook for a few minutes until soft.
  • add the beans tomatoes, tomato puree, sugar, stock or water and the cinnamon stick. stir. and bring to boil.
  • reduce heat. cover. simmer very gently for 1 hour, stirring occasionally. add a splash of water if needed.
  • add the pepper and stir. cover and simmer it gently for 40 minutes.
  • taste. season with salt and a squeeze of lime.
