Salmon Loaf

"Very easy!! Uses cracker crumbs instead of bread. One my mother-in-law always made. You can add the salmon juice to the milk if you prefer."

  • 2 eggs
  • 14 teaspoon pepper
  • 34 teaspoon salt
  • 1 cup milk (a wee bit less)
  • 6 -9 soda biscuits or 6 -9 Ritz crackers
  • 1 can salmon, drained
  • 18 teaspoon sage (optional)
  • 1 tablespoon onion

directions

  • Beat eggs well.
  • add remaining ingredients.
  • pour into small greased casserole dish or loaf pan.
  • Bake 350 F, for 1 hour or until knife inserted comes out clean.
