  • Wash and hull strawberries.
  • Purée in a blender or food processor until smooth.
  • Pass through a sieve, if liked.
  • Chill in refrigerator at least one hour.
  • Pour the chilled strawberry purée into a flute (1/3) and then add chilled sparkling wine (2/3).
