4 simple ingredients, two easy steps, 1 delicious potato recipe!!
- 1 lb fingerling potato
- 2 tablespoons olive oil
- 1⁄4 teaspoon fresh coarse ground black pepper
- 1 teaspoon chopped fresh rosemary sprigs or 1⁄4 teaspoon dried rosemary
- Preheat oven to 400*F. Bring a large pot of salted water to a boil. Add potatoes and cook 5 minutes. Drain Well.
- Spread potatoes in shallow roasting pan. Drizzle with olive oil. Season with salt to taste, pepper and rosemary, tossing gently. Roast 20 to 30 minutes or until potatoes are fork-tender.
I used Royal Blue potatoes which crisped up beautifully but unfortunately the taste of the fresh rosemary did not come through and I used far more than the teaspoon but the potatoes still lovely and crispy and we enjoyed, thank you Potato Loving Sisters, made for PAC.
