  • Pre heat oven 230c.
  • Peel and wash potatoes then dice into medium sized pieces. Par boil in micowave in a little water for 5 or 6 minutes. Drain well. Generously coat a flat baking tray with cooking spray, spread out diced potatoes and spray with cooking spray. Sprinkle rosemary over potatoes. Bake 30 - 35 minutes or until potatoes are browned, turning once.

  1. We liked these potatoes, but they definately required a little extra doctoring. Here's what I did...I added 1 Tablespoon+ of butter, salt & pepper to our taste preferences, and 2 or 3 cloves of minced garlic for added flavor. I really liked the preparation suggestion for par-boiling the potatoes, but found that 5 minutes in the microwave was not enough. I microwaved these, covered, with approximately 1/2 cup water for 10 minutes. This made the potatoes still firm, but softened the outer edges. Our family enjoyed the crusty exterior of the potatoes, the soft creamy interior, and the heavenly aroma of the rosemary roasting.

Im a busy mum of three well four if you include my husband! Lol... I really enjoy cooking :) Main meals are my favourite, and i enjoy all types of food!!
