"This dish is fairly simple, although takes a little bit of prep time. My mother used to make this pretty frequently. It calls for a Dutch Oven, but I imagine one could find a way around that. I like to serve with tortillas. Great leftover as well!"

  • Heat beef, water, salt, pepper, and bay leaf to boiling in Dutch oven; reduce heat.
  • Cover and simmer until beef is tender, 1-2 hours (add water if necessary).
  • Remove beef and cool slightly.
  • Pour broth into a container.
  • Cook and stir onions and garlic in oil until onions are tender. Pull beef apart and into shreds.
  • Stir beef, onions, garlic, chilies, reserved liquid and the remaining ingredients into broth. Heat to boiling, reduce heat, and simmer uncovered 30 minutes.
  • Serve over rice.

  1. Oh this was so good and really easy! Inexpensive ingredients too, but not sacrifice in flavor! I only had 1 lb of beef, so used 1 large yellow onion and 1 green pepper and kept everything else the same and it was perfect! loved the smells of the beef when it was simmering - and was surprised how a few simple ingredients could fill the house and even backyard with wonderful smells. I shredded the beef and then poured the broth on top of it while prepping the onions and garlic. I also added the green pepper to the onions to simmer what my Dad calls the "trinity." I also made 1.5 cups of white rice and just mixed it all together. Made quite and bit which is great for DH's lunches. Thanks so much for a keeper!
