Oh this was so good and really easy! Inexpensive ingredients too, but not sacrifice in flavor! I only had 1 lb of beef, so used 1 large yellow onion and 1 green pepper and kept everything else the same and it was perfect! loved the smells of the beef when it was simmering - and was surprised how a few simple ingredients could fill the house and even backyard with wonderful smells. I shredded the beef and then poured the broth on top of it while prepping the onions and garlic. I also added the green pepper to the onions to simmer what my Dad calls the "trinity." I also made 1.5 cups of white rice and just mixed it all together. Made quite and bit which is great for DH's lunches. Thanks so much for a keeper!
