  • Pre heat oven to 180C.
  • Spray a medium baking dish with the olive oil spray to coat.
  • Place the halved tomatoes, cut side up, in a single layer in the prepared dish.
  • Sprinkle with the sea salt and lightly spray with more olive oil spray.
  • Bake for 40 minutes or until tomatoes are lightly browned and tender.
  • Meanwhile, combine the vinegar, oil and mustard in a small bowl and set aside.
  • Mix the herbs and feta together and set aside.
  • Remove tomatoes from oven when cooked and place them on a serving platter and sprinkle with the combined herbs and feta.
  • Drizzle with the dressing and freshly ground black pepper.
  • Serve.
