Roasted Tomato Salad With Herbs and Feta

- 6 medium low acid tomatoes, halved lengthwise
- olive oil flavored cooking spray
- 1 1⁄2 teaspoons sea salt
- 2 tablespoons red wine vinegar
- 2 teaspoons olive oil
- 2 teaspoons whole grain mustard (I use honey grain)
- 1⁄2 cup fresh flat-leaf parsley, coarsely chopped
- 1⁄2 cup fresh basil leaf, coarsely chopped
- 50 g feta, crumbled
- fresh ground black pepper
directions
- Pre heat oven to 180C.
- Spray a medium baking dish with the olive oil spray to coat.
- Place the halved tomatoes, cut side up, in a single layer in the prepared dish.
- Sprinkle with the sea salt and lightly spray with more olive oil spray.
- Bake for 40 minutes or until tomatoes are lightly browned and tender.
- Meanwhile, combine the vinegar, oil and mustard in a small bowl and set aside.
- Mix the herbs and feta together and set aside.
- Remove tomatoes from oven when cooked and place them on a serving platter and sprinkle with the combined herbs and feta.
- Drizzle with the dressing and freshly ground black pepper.
- Serve.
