From Quick Fix Meals with Robin Miller on the Food Network
- 6 -8 small red potatoes, quartered into 1/2 pieces
- 1 tablespoon olive oil
- 1 tablespoon fresh rosemary, minced
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon pepper
- Preheat oven to 400*.
- Combine all ingredients in a large bowl and toss to coat potatoes.
- Transfer potatoes to a large baking sheet. Roast 25-30 minutes or until tender and golden.
I've made this recipe quite a few times now and it is so delicious. I usually use baby red potatoes and I have substituted dried rosemary during the winter when I don't have fresh on hand it is still good
