- 1133.98-1360.77 g rotisserie-cooked chicken
- 414.03 ml cooked green beans, cut into 1-inch pieces
- 1 chopped red bell pepper
- 118.29 ml chopped fresh basil
- 59.14 ml pine nuts, toasted
- 2 garlic cloves, crushed
- 78.78 ml extra virgin olive oil
- 59.14 ml red wine vinegar or 59.14 ml white wine vinegar
- 4.92 ml salt
- 2.46 ml fresh coarse ground black pepper
directions
- Remove skin from chicken, discard. Remove meat from bones and chop. You should have about 4 cups of meat.
- Toss chicken, beans, bell pepper, basil and pine nuts in a large bowl.
- Whisk garlic, oil, vinegar, salt and pepper in a bowl; pour over salad, tossing gently.
