Roasted Chicken Pasta Salad

"This recipe came from a good friend of mine...from what I know she made it up. I've had to estimate the amounts, since she usually made this by taste, rather than measurements. It's very tasty and a good pasta salad to bring as a side dish to a bbq/party. Note: You may want to add a bit more ranch just before serving, since the pasta tends to absorb moisture while it sits."

  • 1 rotisserie-cooked chicken
  • 1 (16 ounce) box pasta, shells
  • 1 cup light ranch salad dressing
  • 12 cup low-fat mayonnaise
  • 12 cup low-fat Greek yogurt
  • 14 cup reduced-fat parmesan cheese
  • 1 teaspoon Lawry's Seasoned Salt
  • 1 teaspoon garlic powder

directions

  • Prepare pasta according to directions.
  • Cut all meat away from bone into bite-sized pieces - be sure to remove all skin and discard.
  • Mix meat and pasta with remaining ingredients.
  • Refrigerate until ready to serve.

  1. The various seasonings made the dressing for this pasta salad really tasty! It didn't take long to put together and we enjoyed it very much! Personally I always like to add vegetables to everything, so would probably add some salad vegetables next time- maybe cucumber, tomatoes etc. Made for PAC Spring 2012.
