Roasted Asparagus and Tomatoes

- 29.58 ml olive oil
- 29.58 ml balsamic vinegar
- 4.92 ml dried thyme leaves
- 1 garlic clove, minced
- 2.46 ml salt
- 2.46 ml black pepper
- 1.23 ml brown sugar
- 473.18 ml grape tomatoes or 473.18 ml cherry tomatoes
- 2 bunch asparagus
directions
- Preheat the oven to 300 degrees F.
- Whisk together the olive oil, balsamic vinegar, thyme, garlic, salt, pepper and brown sugar.
- Cut the tomatoes in half and toss to combine with the olive oil mixture.
- Spread the tomatoes in a roasting pan and place in the oven.
- Cook, stirring occasionally, for 30 minutes, or until the tomatoes are shrivelled.
- Break the ends from the asparagus at their natural breaking point. Add the tender lengths of asparagus to the tomatoes and continue to cook for 25 minutes or until the asparagus is tender.

I thought this was excellent but my DH thought it was just "good". I completely omitted the brown sugar (and would absolutely do that again!), I increased the garlic and used campari tomatoes that I quartered. I really thought this was great and will definitely make again. The garlic, tomatoes, balsamic and thyme were FABULOUS together. Great recipe!

This was excellent! The flavours went well together, especially with the Herbed Pork Tenderloin I had. (#34335)I did not have cherry tomatoes, but cut up some large tomatoes. The balsamic mixture blended deliciously with the juices of the tomatoes. We had it with some basmati rice, and a green salad drizzled with balsamic vinaigrette. Yum!

I liked this but I also found it a touch too sweet. I think if you have really ripe, luscious tomatoes their natural sweetness adds a lot to the dish so in that case you might be able to leave out the brown sugar altogther. Otherwise I liked this dish and may try it again without the sugar. It would be yummy served as part of a salad.
