I always cook carrots with my roast and potatoes, but they are definitely optional in this recipe
- 3 cups cubed cooked potatoes
- 1 teaspoon vegetable oil
- 2 cups cubed leftover roast beef
- 1 cup sliced cooked carrot (optional)
- 1 (10 ounce) canroast beef gravy (or equivalent leftover gravy)
- salt and pepper
- Fry potatoes in oil until lightly brown.
- Add remaining ingredients.
- Heat through.
