Rhubarb Nut Bread

ingredients
- 1 egg
- 1 1⁄2 cups brown sugar
- 2⁄3 cup liquid shortening
- 1 cup sour milk
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- 2 1⁄2 cups flour
- 1 1⁄2 cups fresh rhubarb, diced
- 1⁄2 cup nuts
directions
- Mix above ingredients and put in 2 greased and floured loaf pans.
- Sprinkle topping (see below) over top and bake at 325 degrees for 1 hour.

TOPPING:
- 1/2 Cup sugar.
- 1 tablespoons butter.

This bread was pretty good. I wish there was more of a rhubarb taste and I think next time I will not dice it but cube the pieces to retain more of the flavor. The walnuts seemed to overwhelm the rhubarb. I'm glad you have edited the recipe to include the sour milk too. It is very moist and light in texture. Will try this again for larger chunks of the rhubarb and see if that does not help the flavor. Made for Photo Forum Flour Challenge Apr 08
